Central Republic of Africa Recipes

Recipe of Kanda
Preparation time: 35 minutes
Cooking time: 1 hour
Ingredients (for 6-8 people)
1 1/2 lb of ground beef
3 cups pumpkin seeds
2 onions
7 garlic cloves, peeled
4 large fresh tomatoes, peeled, seeded and diced
1 or 2 chili peppers
1 small bunch of parsley
1/2 cup cold water for the meatballs
1 1/2 cup water for the sauce
1/2 cup oil
Salt
Pepper
Preparation
Slightly roasted pumpkin seeds and ground to a powder in a food processor.
In a meat grinder (or food processor), grind the meat, pumpkin seed powder, garlic and onion. Add salt and pepper.
Stir in 1/2 cup of cold water into the mixture and knead well for 3 minutes until forming a homogeneous dough. Refrigerate.
Slice the other onion. Sauté in oil for 2 minutes over medium heat in a large pot, stirring regularly.
Add the tomatoes and chili peppers and sauté again covered, for 5 minutes.
Pour 1 1/2 cup of water and increase the heat until the reaching a boil, then turn down to low heat.
Form meatballs about the size of a golf ball.
Increase heat and place each meatball in the sauce very carefully.
Cook over high heat for 10 minutes.
Then cook over medium heat for 20 minutes.
And finally simmer for 30 minutes.

When cooked, increase the temperature if necessary, to reduce the sauce.

Ingredients
1/2cup white rice
1 1/2cups water
1/4cup peanut butter(natural preffered)
1/4cup sugar
1/8cup water, plus more as needed
Instructions
1. Boil water. Add rice and simmer uncovered for 15 minutes.
2. Meanwhile, mix together peanut butter, sugar, and 1/8 cup water.
3. When the rice is almost done cooking pour peanut butter mixture over rice and stir in. Continue simmering until rice is perfectly tender.
4. Add water as necessary to keep the consistency loose, like rice pudding. Enjoy warm or cold, with a big sweet tooth.

Benne Wafers
Country: The Central African Republic
Course: Dessert
Makes: 18 to 24 wafers




Ingredients:
1 cup sesame seeds, toasted
3/4 cup butter, melted
1 1/2 cups brown sugar, packed
1 egg
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
Directions:
1. Heating oven to 375 degrees.
2. Heat a dry pan over a medium flame and add the sesame seeds, stirring constantly until they start to turn a light shade of brown. Remove them from the heat and transfer to a small bowl.
3. Mix all the rest of the ingredients together and add the sesame seeds.
4. Grease a baking sheet. Drop the dough by half-teaspoons onto the sheet, making sure to keep two or three inches between each wafer.
5. Bake for 5-6 minutes, or until the edges of each wafer start to brown. Remove from the oven and let sit for 2-3 minutes.
6. Transfer to a wire rack to cool.
